I have scanned some documents(notes) on the computer using adobe acrobat 6.0 scan function.
I would like to convert the scanned image in a way that is readable(text format) not image as it is now.
Is there a way?

Any old character recognition application should do you....
Check the disc that came with your scanner....should ahve 'textfinder' or some other app that'll do text. You may have to help it learn for a good 20 pages but after that it'll take over.
Also...it's very important to have each page cleanly laid out and not skewed/light-dark in some spots as it may hinder it's ability to grab the text properly.

a sort of pdf to doc converter.
most OCR software (character recognition) should be able to take an already scanned image and convert it to text.
ABBYY allows you to take a PDF and convert it to text, others may too.
